one of my fave brekkies [usually brekky#1 at 5:45am] is a half cup of egg beaters (or Better 'n' Eggs) scrambled with some onions/pprs and made into a sammich with two sliced of Ezekiel brand raisin toast
I have microwaved them, but they seem runny, still. Like there is always yellow liquid floating around at the bottom of my bowl, and that make me want to hurl.
What I've done is pour a carton of it into a 8x8 baking dish (add salsa, or whatever you like), bake it for 40 minutes or so (until done), cut into four squares, and refrigerate. Then I reheat them in the microwave the next morning and make healthy egg mcmuffins.
